Ya’ll… This chicken tho… It’s to die for and SO easy to make! Toss in the crock pot and go!
Crock Pot BBQ Balsamic Chicken Thighs
What you need:
3 pounds of boneless chicken thighs (or do like I did and cover the bottom of your crock pot)
1 small-medium red onion diced
4 large cloves of garlic, smashed & minced
1/4 cup fresh basil chopped
1/2 teaspoon of sea salt
1/2 teaspoon of pepper
1/2 cup of balsamic vinegar (enough to almost cover the thighs)
2 TBS coconut oil, melted
parsley for garnish
your favorite BBQ sauce
What to do:
Pour oil into bottom of crockpot..add chicken and pour the balsamic vinegar on top. Add all other ingredients (but not the parsley). Cook on high for 4 hours or low for 8. Once it’s done cooking, the chicken will fall apart! Shred completely and add your favorite BBQ sauce. Top with parsley!
Serve on a gluten-free bun (or lettuce wrap) with some tomato, lettuce, and avocado slices. Add a side of lemon steamed broccoli (steam broccoli then add juice of 1/2 a lemon) for an easy, flavorful meal sure to please even the pickiest eater!
Best news is that it’s gluten free (depending on your BBQ sauce), dairy free, and 21DSD compliant!
You could even go the mexican route and swap the basil for cilantro! BBQ chicken tacos! I’m drooling…
