Creamy Broccoli Bacon Bake {Paleo, Low-FODMAP, AIP friendly}

broccoli bacon bakePlease excuse the sub-par photography, but I didn’t want to wait until I made it again to share.   This was the best broccoli I’ve ever had (that wasn’t smothered in cheese)! There’s bacon. yes BACON, need I say more? Looking for a side dish to spruce up any meal? you can prep this ahead of time and it only gets better the longer it sits in its awesomeness.  Want to make it? Here’s how:

Creamy Broccoli Bacon Bake {Paleo, Low-FODMAP, AIP friendly}

what do I need:

4 cups small broccoli florets

¼ cup butternut squash, diced

1/2 can full fat coconut milk

2 cloves garlic, finely chopped (for low FODMAP, sub 1TBS garlic infused oil)

1/4 onion, finely chopped (for low FODMAP, sub ¼ cup leek)

4 slices fully cooked bacon, chopped (I used Applegate turkey bacon)

make it:

  1. HEAT oven to 425°F.
  2. Bring 1/2 can of full fat coconut milk to a boil, add finely chopped garlic to mix, simmer for 30 min.
  3. SAUTEE onions in a separate saucepan, once partly transparent, add bacon to same saucepan. Once bacon is cooked, add to the coconut milk and garlic mixture. Toss butternut squash into same saucepan, cook until tender. Then add broccoli to saucepan of simmering coconut milk; cook 2 to 3 min or until crisp-tender.
  4. STIR until vegetables are evenly coated with sauce, adding reserved coconut milk if necessary for desired consistency.
  5. SPOON into casserole dish sprayed with cooking spray. (optional: top with additional bacon.)
  6. BAKE 25 min. or until heated through, uncovering for the last 5 min.
